Dark Chocolate, Protein, Coconut, and Date Truffles with Crunchy Almonds

A great little snack to have before or after training, exercising, gyming. Just like my protein fudge, perfect for us heads with a sweet tooth looking for a healthy option.

Ingredients
  • 64 g / 1/2 cup Whole Almonds
  • 85 g / 2/3 cup Dark Chocolate
  • 250 g / 2 cups Pitted dates
  • 1 Lime
  • 100 ml Coconut milk (any milk/water/juice/)
  • 30 g Pea Protein Powder (or powder of your choice)
  • 60 g / 1/2 Cup Desiccated coconut
Method
  1. Heat oven to 180c/356fh. Spread out the almonds and toast for 5 minutes.

  2. Spread out the coconut on a tray and bake for 2 minutes to get a nice toasted light brown color. When they cool, roughly chop them in your food processor, take out and leave to the side.

  3. Add to your food processor your chocolate, dates, cinnamon, protein powder and juice of the full lime and roughly blend.

  4. Slowly add in the milk to make a dough consistency- does not have to be smooth.

  5. Take out the mix, place in a bowl, fold in almonds, mix well and leave in your fridge for around 5-10 minutes.

  6. Take out the mix, roll into small bite-size balls and roll over the toasted coconut, covering the balls. Make as many balls as you want and leave back in the fridge. Eat anytime.

TIP: If you like a punch, add a little Rum/Whiskey.
